Feature: Sommelier of the Year, David Haskell, BIN 8945 Wine Bar & Bistro
Anybody who knew David Haskell, all prim and proper in his suit and tie, when he was the general manager and sommelier at Aubergine in Orange County, probably won't recognize him now (at least not right off) at BIN 8945. He looks like any of the other hot young waiters in the restaurant, wearing trendy, low-cut jeans and a T-shirt, except he's the owner, and he's the one constantly climbing up and down ladder to retrieve more wine. And that, in part, is what makes his new wine bar in West Hollywood so great. This former fine dining front man, who also worked at Le Cirque and Aquavit in New York, amassed an incredible knowledge of wine over the years. He has assembled a collection of more than 450 wines from every region of the world, from which he pours as many as 50 at a time by the glass or flight. A terrific, globally inspired menu gives Haskell unlimited pairing options, whether it's a fabulous Tinta Roriz from Portugal to go with duck confit, or sake from Yamagat to accompany an exquisite hailbut ceviche. This is the most unstuffy place in L.A. to enjoy— and learn about—fabulous wines. Plus the kitchen stays open until 1:30 AM, so it's no wonder that chefs like Spago's Lee Hefter have already stopped in for a bite and drink after work.
